Fresh Express Chopped Salad Kit-Sweet Kale

Do you have a go to snack? My favorite go to snack right now is Fresh Express’ Sweet Kale Chopped Salad Kit. I was first introduced to Sweet Kale Salad at a dear friend’s birthday dinner. Celebrity Chef TashaMac prepared a sweet kale salad and it was delicious. I had never had anything like it and it was best thing since slice bread. At the end of the night, I went into the kitchen to see if there was any leftover salad and to my surprise there was a small container. I was the only one to take anything to go, it helped that the chef was my babysitter back in the day. The next day I ate the salad for breakfast, #bestbreakfastever. Her version of the salad is pictured below!

Over the next couple of days, I searched the internet far and wide looking for a sweet kale salad recipe to no avail. I would continuously find salads that were close, but not quite the one. One day I stumbled upon various sweet kale salads in Harris Teeter. Could this be? Have I found the salad of my dreams? Sure enough I did! I purchased four packs of Fresh Express’ Sweet Kale Chopped Salad Kit. I was in Heaven and everything was right with the world.

My version

Thanks to Fresh Express’ Chopped Kits I didn’t have to do much. I didn’t have to chop any cabbage. I didn’t have to julienne broccoli and Brussel sprouts. I didn’t have to work to put the salad together at all. These kits are so convenient! Just open the bags and pour into a bowl. The Fresh Express kits come with the greens, the dressing, and the toppings all in the bag. It’s perfect if you have to bring a dish to a party and you don’t have the time to prepare and cook something. Trust me everyone will love this salad. The Sweet Kale Chopped Kit contains: kale, shredded Brussel sprouts, green cabbage, broccoli, and radicchio. It also comes with yogurt poppy seed dressing (YUM!), roasted pumpkin seeds, and dried cranberries.

Now this salad is complete with all its toppings and dressing, but if you want to go a little further you can. You don’t have to do this, but I highly recommend doing this to give the sweet kale salad an upgrade. Early I mentioned celebrity chef TashaMac’s version of a sweet kale salad. There were three things she did to elevate her sweet kale salad. First, she added poached pears. Then she added candied pecans to salad. Finally, she added fresh goat cheese to top it all off. Those three items took the salad to the next level. First bite of the salad I saw fireworks lol!

Again this salad for me is all about convenience. So if you don’t have time to poach pears that is okay. I am here to tell you, I have never poached a pear and I don’t plan on doing so anytime soon.  The Sweet Kale Chopped Kit will be fine without it; however I would be against not adding the goat cheese or the candied pecans. If you are allergic to nuts, then don’t do the pecans.  I will understand that it is for your own personally safety. If you are serving this dish to others, I would suggest having the goat cheese and candied pecans in separate bowls. This will allow people to choose to add the goat cheese and/or pecans if they wish to.

The Sweet Kale Chopped Salad Kit by Fresh Express is my favorite go to snack right now. I am not sure how long I will be on this kick, but I will probably turn green after a while lol. Since March 7th, 2020, I have been eating this salad at least once or twice a week. If you’ve seen my Insta stories, I am sure you’ve seen me eating this salad. This salad isn’t too sweet and surprisingly not bitter because of the kale. I know sometimes kale can be really bitter and strong, but in this case it is just right.  If you haven’t tried this salad I would suggest trying it. It can be found at Harris Teeter and grocery stores. If you can’t necessarily find it at Harris Teeter, there are other similar versions out there.  I can’t wait for you to try it and tell me your thoughts. Have you had this salad before?
